Creamy Tomato Soup.

2 tbsp oil.
1 little onion, carefully diced.
2 cloves garlic, diced.
8-10 roma tomatoes, chopped.
1 tbs brown sugar.
1 tablespoon tomato paste.
1⁄2 mug parmesan grated OR a remaining parmesan rind.
2-3 cups vegetable broth.
1⁄4 cup cream (optional).
salt and also pepper to preference.
fresh basil for garnish.
In a huge saucepan, heat oil over medium-high warmth.

  • This is a great video, I love the fact that the soups are vegetarian. However, I have a heads up, Parmesan is not a vegetarian cheese. Parmesan contains rennet, which is an enzyme derived from the stomachs of animals (lambs, calves, goats, etc.). Vegetarians should definitely abstain from Parmesan cheese.

    • The enzyme itself is not the problem, it is how they obtain it:
      “To obtain rennet using the customary method still used by many European and traditional cheese-makers, stomachs of young calves are dried and “cleaned”, then sliced into small pieces and put into an extraction solution, which will be filtered after several days.”

      There are many cheeses with enzymes from a laboratory, but Parmesan is made “traditionally” with the stomach of calves, which is where they obtain the rennet, which means the calves have to be killed (hence not vegetarian).

    • I disagree because at work we have different variety of vegetarians. Some are ovoo, lacto or straight vegan. Some vegetarians choose to eat cheese including parmesan cheese. Personal choices. It is all good.

    • i made a soup of corn, carrots and tomato. it is ready in 15 minutes. it tastes great.

    • Yeah, I love the green parts, don’t know why so many people discard them. I even like them in my soup!

  • Goodness, I always freeze the green parts of the leek to use in broth, or chop it up for stews and such. Sure the flavour is a lot sturdier, but it’s still super good, and a shame to just discard 🙁
